Schweeet Muffins

(Makes 12 Muffins)

Ingredients:

200g Ground Almonds
20g Butter (or Coconut Oil / Dairy free alternative)
4 Eggs
2 Apples (Grated)
2 Tsp baking powder
1 Tsp Ground Cinnamon
100-250g Fruit such as blueberries or Banana (try your own variations)
20 – 30 Drops of Schweeet (to taste)

Instructions:

Combine all the ingredients together apart from the fruit and use an electric whisk until the mixture is a smooth consistency. Add your chosen fruit and whisk until the fruit has mixed well, if using blueberries it is good to keep whisking until they start breaking down and you start getting a blue colour to the mixture. Some people like large chunks in their muffins other don’t so whisk as appropriate.

In a 12 portion muffin tray line each portion with parchment paper and spoon your mixture evenly between them all.

Place the muffins in the oven for around 20-25 minutes or slightly golden brown on top, remove from the oven and let them cool if you can wait that long!
