Schweeet Peanut Butter Digestives
170g Organic Wholemeal Bread Flour
170g Organic Jumbo Oats (ground to powder in a blender)
1/2 Tsp Bicarbonate Of Soda
1/2 Tsp Maldon Sea Salt (ground fine)
150g Butter (diced) or Pure Dairy Free Sunflower Spread (Vegan Friendly)
50g – 100g Crunchy Peanut Butter (we use whole earth)
60g Mashed Banana
30 Drops of Schweeet
In a bowl mash up the banana until it forms a liquid, add your drops of Schweeet, stir and leave it to rest. Mix the flour, salt, bicarbonate of soda and oatmeal in a food processor or large mixing bowl, then rub in the butter or spread and peanut butter until it looks a bit like breadcrumbs.
Mix in the banana and Schweeet and peanut butter until you get a nice dough ball (the stickyness goes quite quickly as you mix, really use your hands), wrap in cling film and leave in the fridge until it has firmed up a bit (10-15 minutes or so). Once the dough has firmed up a bit, roll it out to 1-2 cm thick (we suggest placing it in the middle of parchment paper and using a rolling pin, this will stop it sticking to any surfaces.
Pre-heat your oven to 180 degrees, cover a large baking tray with parchment paper, cut the dough into shapes of your choosing, place them on the tray and pop them in the oven for 20 minutes (depending on thickness), turn them over half way through to get an even colour, sometimes they might need an extra 5 mins, if so turn then again first, they need to be well baked but make sure they do not burn!
Remove from the oven and allow to cool properly, before serving for the best taste, if you can wait that long! they taste better the next day or day after.
