Almond Biscuits Ingredients:

300g Ground Almonds (Almond Flour)
170g Organic Oats (ground to powder in a blender)
1/2 Tsp Bicarbonate Of Soda
1/2 Tsp Maldon Sea Salt (ground fine)
150g Butter (diced) Stork Block (or any other vegan butter alternative can be used)
100g Crunchy Peanut Butter
60g Mashed Banana
30 Drops of Schweeet


In a bowl mash up the banana until it forms a liquid, add your drops of Schweeet, stir and leave it to rest. Mix the ground almonds, salt, bicarbonate of soda and oats in a food processor or large mixing bowl. Rub in the butter or spread and peanut butter until it looks a bit like breadcrumbs.

Mix in the banana and Schweeet and peanut butter until you get a nice dough ball (keep it slightly sticky otherwise it gets a bit crumbly).  Roll it out to 1-2 cm thick (we suggest placing it in the middle of parchment paper and using a rolling pin, this will stop it sticking to any surfaces.

Pre-heat your oven to 180 degrees and cover a large baking tray with parchment paper. Cut the dough into shapes of your choosing, place them on the tray and pop them in the oven for 20 minutes (depending on thickness). Turn the biscuits over half way through to get an even colour. Depending on your oven they might need an extra 5 mins, if so turn then again first.  Keep an eye on them, they need to be well baked but not burnt. Remove from the oven and let them cool on a wire rack.
