Fruit Sponge Ingredients:
200g Almond Flour / Ground Almonds
58g Melted Butter (or Dairy free alternative)
3 Medium or Large Eggs (Or Egg alternative)
1 Tsp baking powder (heaped)
100-120g Raspberries or Blackberries are lower carb. (try your own variations, blueberry and mashed banana also work well)
20 Drops of Schweeet (or more to taste)
This is a recipe for a fruit sponge loaf, first off you need to line a small loaf tin with baking paper/parchment.
Melt the butter in a saucepan over a low heat, gently. Mix all the dry ingredients together in a mixing bowl. Whisk (electric is best) the eggs and Schweeet in a seperate bowl. Pour the Schweeet and eggs in with the dry ingredients and part stir with a spoon. Add the melted butter and mix well. Fold in the fruit of choice and evenly spread it in the lined loaf tin. (Optional tip – Whisk a small amount of the fruit into the mixture before folding in the rest).
Bake for around 30-35 minutes at 180 degrees rotate the sponge and check it half way through. When the loaf is golden on top remove it from the oven. and let it cool for later. Alternatively slice it straight away and have it hot with some Schweeet Keto Custard (recipe on the site). The choice is yours.
