Keto Custard Ingredients:
200ml Double Cream
3 Egg Yolks
1 tsp Sugar Free Vanilla Extract or Vanilla Bean (optional)
10 Drops of Schweeet (add more to taste)
Ensure the eggs are at room temperature and whish them together with the drops of Schweeet (and vanilla).
Heat the cream in a saucepan on a medium heat until it ‘just’ reaches simmering point. Move the saucepan off the heat for about 30 seconds to cool slightly. Add the Schweeet and egg mix and stir/fold into the cream well, whilst it is still hot. Return the saucepan to the heat and continuously stir until the consitency of the custard covers the back of a spoon. A spatula can help to ensure that you are mixing it consistently whilst heating, this last step does not take long. If the custard begins to stick to the bottom of the pan remove from the heat.
