Mincemeat Ingredients:
110g Dried Currants
110g Dried Sultanas
175g Dried Raisins
175 Shredded Suet (beef or vegetarian)
45 Drops of Schweeet
1/2 Teaspoon Freshly Grated Nutmeg
2 Teaspoons of Mixed Spice
The Juice of 1 Lemon
The Juice of 1 Orange
1 large Cooking Apple (finely chopped)
*Always check to make sure the ingredients (especially dried fruit) do not contain added sugar.
Mincemeat Instructions:
Combine all the ingredients in a large baking oven proof bowl and stir well making sure it is mixed well. Cover with a clean tea towel and leave overnight.
The next day preheat your oven to 110 degrees C. Remove the tea towel, cover the oven proof bowl with foil and place it in the oven for 2 and a half hours. This will have melted the suet and will help preserve the mincemeat whilst also adding flavour. Let the mixture cool down mixing occasionally. Once it has cooled down you can add alcohol should you choose to. Spoon the mincemeat into glass jars and cover with wax disc and lid. (parfait or jam jars should do) The mixture should last a couple of months (time is reduce due to lack of added sugar)
Pastry Ingredients:
375g Plain Flour (Organic preferred)
250g Unsalted Butter
1 Large Egg (or egg substitute)
18 Drops of Schweeet
Pastry Instructions:
Crack the egg into a bowl and add the Schweeet to it. Rub the butter and flour together and then add the egg and Schweeet mixture. Roll the pastry out (we prefer to do this between 2 sheets of parchment paper to stop it sticking and create less mess). This should be enough pastry to make around 20 pies.
Mince Pie Instructions:
Grease a muffin tray with any butter or oil of your choosing and cut out your pastry to fit, add as much mincemeat as you prefer and make some lids (make sure you cut a hole in the lids prior to baking to let steam out). Brush the tops with milk or egg mix if you prefer, this will brown them off better during baking and also help to stick them together.
Preheat an oven to 180 degrees C and bake the pies for around 20 minutes (until golden brown).
