Blueberry Flapjacks Ingredients:
250g Organic Coconut Oil
500g Organic Rolled Oats
2 Ripe Bananas (Mashed)
1 Tbsp Lemon Juice
20 Drops of Schweeet
Melt the coconut oil in a pan and add 10 drops of Schweeet. Add in the mashed bananas and oats stiring well until evenly mixed. In a seperate pan gently heat/cook the blueberries, lemon and another 10 drops of Schweeet until they are soft. You can add extra Schweeet to the blueberries if desired.
Preheat an oven to 180c, line a 23×33 cm tin with parchment paper and spread half the oat mixture over the bottom. Pour on the blueberry mixture and spread evenly. Add the other half of the oat mixture on top (perfectly fine to see some of the blueberry mixture through it).
Place the tin in the oven for around 20-25 minutes, until it turns a slightly golden brown colour. Remove from the oven and leave it to cool (inside the tin) for around 5 minutes. Finally use a knife to cut into squares or bars and let it cool completely in the tin (tip: run your knife around the edge of the tin for easy removal later)
